Corn Pie- Grace's Recipe (Mother got this recipe from a woman named Grace Kreider. She liked her corn pie.)
Bonnie and Tom Chesney brought me a Pie Bird from Eldreth Pottery, Strasburg, PA.
I had to try the Pie Bird by baking a pie.

I started thinking about Corn Pie as I walked by the fresh corn at the Corona del Mar Farmer's Market.

Mother often made Corn Pie for Birthday's. This one I made for Colin's Birthday!

The recipe follows:

| Corn, half and half, hard boiled eggs, salt, sugar, butter, green onion,parsley.white pepper. |

| I c. whole corn |
 |
| I cup grated corn |
 |
| 1 green onion chopped (use 1/2 of top) |
 |
| 1 Tbsp. parsley chopped |
 |
| 1/2 Cup half and half |
 |
| 1 tsp. sugar |
 |
1/2 tsp season salt.
Opps I forgot the white pepper pinch. |

2 Tbsp. melted butter.
This is the pan that Bobby Kreider played with as a boy. |

| 2 hard cooked eggs (chopped) |
 |
Combine all ingredients. Fill Pastry lined 9" pie pan or shallow 1 qt. casserole.
Top with pastry.
Bake 1 hour at 375 until browned |

I found a note I made while talking to Mother about Corn Pie.
ReplyDelete"I liked my Mother's corn pies but I like the neighbors pies better. Her name was Grace Kreider. Mother used to buy Grace Kreider's pies when she was working and I'd say I like this better.She had more eggs and no potatoes. Grace Kreider charged 50 cents for a pie. When corn was in season it was 1 cent an ear, 12 cents for a dozen. People had chickens and lots of eggs. Grace Kreider was married to Ezra Kreider. They lived in Cleona, PA."
