I love making Cioppino. It was intimidating at first but then I learned it was just fish stew with whatever you wanted to throw into it. Here it goes, lots of fun!
This is not a family recipe. I'm just practicing for my blog!Ciopinno ready to eat.
| I forgot the celery. |
The Ingredients:
1/4 cup olive oil
1 onion diced
4 cloves of garlic minced
2 ribs celery, chopped
bottle of clam juice
jar of Marinara sauce or tomatoes
1 1/2 cup red wine
1 cup chicken broth
1 bay leaf
1 bay leaf
1 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. salt
2 pieces cod
10 clams
12 shrimp
parsley chopped
The Preparation:
Add the rest of the ingredients except seafood and fresh parsley.
Watch the beginning of Patriots football game.
Add Chicken broth
Add Clam Juice
Let simmer for one hour. I made this ahead on Sunday for Monday Night Football dinner.
On Monday I added the fish to this stew!
The Next day:
I heated the fish soup base and first added the cod. I had pieces of cod and cooked for about 10 minutes. Next I added 10 clams and cooked until they opened, about another 10 minutes.
I forgot to take a picture of the beautiful small clams.
Almost ready to serve and I added the shrimp. I choose this selection of fish but you may choose other kinds of fish. That's what makes it so fun. I do like clams or mussels for the look of the shells in dish when served. I served this with garlic bread.
We all enjoyed the Ciopinno.
